This diagram is for the pickups to switches only and does not show any pots or preamp.
With this drawing you can use 2 3-way dpdt on/on/on switches to get series, single, and parallel settings. In single coil mode the outer coils are selected and will be hum cancelling when they are both on.
Please note that series mode will be louder than either of the other settings.

If you could provide a schematic showing how these pickups are currently wired, I can easily show how to insert a switch for single-coil mode.
Most pull-pot switches are DPDT so one such can switch both pickups to single coil, or you can have one switch for each pickup.
You could also have a look at how I wired my bass with two dual-coil pickups. It has two volume pots (one for each pickup), a three position rotary switch for coil selection, and each pot has a pull switch for series operation.
Look here.
